Recipe: Cheese Slices (non-dairy, and actually healthy)

Do you know this “plastic cheese”, processed and yellow and single wrapped? It doesn’t really taste that great but for some reason, it ends up in fridges again and again.

Here is an alternative to the store bought version. Raw, vegan – dairy free, and also soy free! So if you ever crave those cheese slices again but prefer to nourish your body, try this recipe, it is fast and easy to make.

 

Ingredients for 16 slices:

1.5 cups cashew nuts, soaked (=1 cup before soaking)

2-3 TBSP nutritional yeast

1/2 tsp turmeric

2 cloves of garlic, peeled

1 TBSP psyllium husk

1 pinch of sea salt

1/2 cup water, add bit by bit

Preparation:

Blend all ingredients in a high speed blender, add just enough water to create a spreadable cream.

Scrape down the walls of your blender if necessary so the mixture blends evenly.

Do a taste check, add more garlic, nutritional yeast or salt if necessary.

Spread onto a teflex sheet or parchment paper, approximately 1/4 inch or 1/2 cm thick.

Dehydrate for 4 hours at 112F or 43C.

Flip, peel off teflex/ paper, cut into squares and continue dehydrating until the slices are dry yet still soft and pliable.

Store refrigerated for up to 5 days.

Notes:

C = cup, 240 ml
1/2 C = half a cup, 120 ml or / TBSP
1/4 C = quarter of a cup, 60 ml or 4 TBSP
TBSP = table spoon, 15 ml or 3 tsp
tsp = tea spoon, 5 ml
“soft dates” = medjool are usually best. If necessary, soak briefly and drain. The soaking water is super sweet by the way!

    What do i have to do when i have No dehydrator?
    Is there an Option of heating it up in a potatoe and then putting it on The paper for the wanted concistency?

    • Hi Nelly, I would dry the slices in an oven, but you need to keep the temperature really low otherwise they’ll burn. Let me know how it goes if you try it! Cheers, Lisa
