✰ Recipe: How to make healthy no-bake chocolate brownies ✰

 

BROWNIES that are actually good for you?

It doesn’t get much better than that .. hang on.. CHOCOLATE Brownies that are good for you? Yes, that’s indeed better… and… DELICIOUS Chocolate Brownies that are good for you? Oh yeah, now that cannot be topped.. unless it’s nobake. And, yeah! These brownies thick that box as well 🙂

So.

May I introduce you to:

THE ULTIMATE NoBAKE CHOCOLATE BROWNIE

Ingredients:

1 cup equal parts walnuts and pecans (or one of the two), ideally soaked rinsed and dehydrated
5 medjool dates, pitted (if dates are very dry, soak in water for 20 minutes)
2 TBSP raw cacao powder or carob powder
1/2 vanilla bean, scraped
1 pinch of sea salt

a dash of water water, if necessary

Preparation:

Roughly chop nuts manually, in a blender or food processor.
Put 2 TBSP of the chopped nuts aside and process the remaining nuts into a finely ground consistency.
Add cacao, salt and vanilla.
Add the pitted dates piece by piece and process until the mixture is sticky, add water if necessary.
Finally fold in the nut crumbs.
Shape into squares or balls or press into silicone moulds, then chill until serving.

 

Store refrigerated for up to 2 weeks.

Notes: *

C = cup, 240 ml
1/2 C = half a cup, 120 ml or / TBSP
1/4 C = quarter of a cup, 60 ml or 4 TBSP
TBSP = table spoon, 15 ml or 3 tsp
tsp = tea spoon, 5 ml

Liquid of choice = water, coconut water or plant based milk (check out my book “Milk. Vegan” with over 20 recipes!)

“Soft dates” = medjool are usually best. If necessary, soak briefly, then drain excess water. The soaking water is super sweet by the way!

Sweetener of choice = dates or other dried fruit, rice syrup, xylitol, stevia, coconut nectar, maple syrup, agave nectar, vegan honey

    Hi,
    ich danke Dir herzlich für dieses Rezept. Morgen werde ich es nachmachen und dann….. geniessen :-).
    Bitte sei so nett und verrate mir, wie Deine Küchenmaschine heißt. Bisher erledige ich alle Arbeiten mit meinem Thermomix bzw. Vitamix – und dann ab in den Sedona. Diese Küchenmaschine würde mein Equipment gut komplettieren :-).

      meine ist von KitchenAid – wenn Du auf Amazon.com kitchenaid food processor eingibst, findest Du verschiedene Modelle. Mein Gerät hat eine 12 Tassen Kapazität – ich dachte mir, besser ein bisschen zuviel Platz als zuwenig, vor allem beim Cracker-machen.

  • Hello, i have 2 questions, for how long do i chill? Maximum hours?
    And should i refrigerate it only or put in the freezer? Lol dont mind my questions i’m new at no-baked cakes 😛

    • Hi Amy,

      thank you so much for asking! There are no maximum hours to chill these, and refrigeration will be sufficient – if you freeze them, you can keep these brownies for up to 1 month though 🙂 Let me know how you liked them – the dough will be supertasty right after processing it! Cheers, Lisa

    • Yes, of course. These brownies keep very well because the ingredients are only dry fruit, nuts and spices – nothing can turn sour here 🙂
