Recipe: Thai Coconut Soup – Tom Kah Ingredients: for 2 1 young Thai coconut, water and jelly 3 tomatoes, chopped 100g fresh spinach 3 champignons or 1 large brown mushroom 1 apple, sweetly sour 50ml Tamari Sauce 1/2 bunch coriander 2.5 cm Ginger, peeled 3 cloves of garlic 1-2 chilis 1 stalk lemon grass * 5 sugar peas sprouts, various Preparation: Blend coconut, tomatoes, spinach, mushrooms, apple, tamari, coriander (leave a bit for decoration), ginger, garlic and chili in your Vitamix . Pour into 2 serving bowls, decorate with chopped sugar peas, coriander and sprouts. Enjoy!
