Recipe: Greek Salad

Ok so we all know the traditional Greek Salad, with Feta dairy cheese – but have you tried a raw and vegan version yet?

Here’s how:

for two as a main or 4 as a side

Ingredients:

1/2 cucumber, sliced thickly, cut into halves
2 tomatoes, diced
a few black olives – a as whole or sliced
1/4-1/2 red onion, sliced
1/2 C Almond Feta Cheese – make it the day before

Dressing:

2 TBSP cold-pressed olive oil
2 TBSP balsamic vinegar
juice of 1/2 a lemon
1 clove of garlic, minced
1 tsp herbs of your choice – fresh oregano and basil give a fine aroma

Preparation:

Put all dressing ingredients in a jar with screw cap and shake thoroughly, blend them in your blender or stir them together with a fork.
Place all salad ingredients in a bowl, drizzle dressing all over and toss gently.
Divide salad between plates, decorate with herbs.
