This sweet flatbread is such a good treat, for kids and grown ups alike! It is all raw and vegan, made with fruit, nuts and seeds – so yummy and crunchy while being gluten-free.
These go really well with any cheese recipe, or also fruit puree for jam and you can also use other nuts and fruit, such as apples, mixed berries and almonds or brazil nuts!
RECIPE: HAZELNUT PEAR FLATBREAD
Ingredients for 2-3 trays:
2 large pears, cored (400g)
1/2 cup hazelnuts
1/2 cup buckinis
2 TBSP flax seed
2 TBSP liquid sweetener – date paste, maple syrup, rice syrup, agave, coconut nectar
2 tsp cinnamon
1/4 tsp sea salt
How to make this recipe:
Coarsely grind hazelnuts, buckinis and flax seed in your blender or food processor.
Set aside in a bowl.
Chop the pear and blend it with the spices.
Pour into the bowl with the nuts, and stir together.
Spread on a dehydrator sheets.
Dehydrate at 42 degrees for 4 hours or until you can flip the sheets over and pull them off the flatbread.
Cut into shapes, dehydrate for another 3 hours or until dry, yet still pliable.
Store in an airtight container for up to 10 days.
Notes:
C = cup, 240 ml
1/2 C = half a cup, 120 ml or / TBSP
1/4 C = quarter of a cup, 60 ml or 4 TBSP
TBSP = table spoon, 15 ml or 3 tsp
tsp = tea spoon, 5 ml
“soft dates” = medjool are usually best. If necessary, soak briefly and drain. The soaking water is super sweet by the way!
