You may know this as Golden Latte or Turmeric Latte, however back in 2011 when I wrote up this recipe to stay warm through winter, there were no Lattes other than the ones made with coffee. I called it Tigermilk because of its color and the stripes you get when you drizzle a bit of syrup on top and swirl through the cinnamon, nut milk foam and turmeric goodness. Tigermilk is a spicy sweet, delicious dairy free alternative to drinks with milk.
This recipe is made with pine nuts which you could substitute with soaked cashews (simply place in water for 2 hours to up to overnight, rinse, use).
RECIPE FOR TIGER MILK
Ingredients:
500ml water
100g pine nuts
1 TBSP coconut oil
1 tsp cinnamon
1 inch ginger peeled – or 2 tsp ground
1/2 inch turmeric, peeled – or 1 tsp ground
1/2 tsp chili
3 drops stevia – or to taste
100g goji berries
Preparation:
Blend all ingredients in a high speed blender.
Tip:
For warm milk, use warm water and blend a little longer at maximum speed.
The blender will heat up a bit and make your Tiger Milk deliciously warm and smooth.
Notes:
C = cup, 240 ml
1/2 C = half a cup, 120 ml or / TBSP
1/4 C = quarter of a cup, 60 ml or 4 TBSP
TBSP = table spoon, 15 ml or 3 tsp
tsp = tea spoon, 5 ml
“soft dates” = medjool are usually best. If necessary, soak briefly and drain. The soaking water is super sweet by the way!
