Ingredients:
1.5 C cashews (soaked)
1/2 – 1 C water
juice of one lemon
1 TBSP nutritional yeast OR 1.5 TBSP apple cider vinegar
1 generous pinch of salt
Preparation:
Blend all ingredients in a Vitamix and add water by the spoon if necessary.
Sour cream is a great as a simple dip for veggies or dolloped onto soup.
This recipe will keep for 3-5 days in the refrigerator.
