Recipe: Cookie Dough Superfood Paleo Bars (raw vegan)

How often does it happen to you that you are on the road, you would really want a snack but there is nothing around except sugar laden junk food? Try this recipe instead, a paleo bar tasting like cookie dough, and raw vegan on top of it!

The paleo diet is a way of eating that is quite popular these days, with low carbs and more protein. Paleo is usually not vegan or vegetarian though, and includes dairy, eggs and meat. It  is based on the ancient ways of feeding yourself – hunting down your food with bow and arrow, but there are more and more vegans and vegetarians therefore these bars are vegan and, as a bonus, even raw! No baking required 🙂

 

RECIPE FOR PALEO COOKIE DOUGH BARS

Ingredients for 15 bars:

2 cups cashew nuts
1/2 cup almond butter
1/2 cup buckwheaties
2 TBSP cacao powder
2 TBSP coconut syrup
2 TBSP golden flax seeds
1 TBSP virgin coconut oil
2 dates
2 TBSP chia seeds
1/2 tsp vanilla seeds

optional:
cacao nibs
1 TBSP spirulina, chlorella, blue-green algae etc.

 

Preparation:

Process cashews buckwheaties, flax and chia in your food processor.
Add Cacao powder, vanilla and coconut oil.
Add sweetener, dates and finally the almond butter.
Process until a ball forms.

Roll into balls or flatten, cut into bars and wrap in parchment paper.

Store refrigerated for up to 1 month.

Notes:

C = cup, 240 ml
1/2 C = half a cup, 120 ml or / TBSP
1/4 C = quarter of a cup, 60 ml or 4 TBSP
TBSP = table spoon, 15 ml or 3 tsp
tsp = tea spoon, 5 ml
“soft dates” = medjool are usually best. If necessary, soak briefly and drain. The soaking water is super sweet by the way!
