Sunny Cali Spread: Sunny because of the sunflower seeds, Cali because I associate California with cilantro plus it is one of the epicentres of Raw Foods!
1 1/2 C sunflower seeds, soaked overnight
1 lemon, juiced
4 scallions, chopped
1/3 C water
3 TBSP tahini
1 TBSP nama shoyu
1/2 C cilantro (coriander), chopped
1 TSP cold pressed olive oil
Salt & pepper to taste
Blend drained and rinsed sunflowerseeds with remaining ingredients.
To intensity the flavour, refrigerate overnight.
The spread might at first have a strong taste of lemon which should vanish after a while.
Store refrigerated for up to 5 days.
Great on this ultimative bread or simply spread onto a stick of celery!
