Recipe: Eyes Wide Open Smoothie

Eyes wide open – this smoothie opens your eyes with it’s basil freshness. It’s also the perfect smoothie for your vision as it contains the antioxidant powerhouse vitamin A, vitamin C, beta-carotene and iron.

This smoothie keeps refrigerated for up to 48 hours.

SMOOTHIE RECIPE: EYES WIDE OPEN

Ingredients for 2 cups:

1 mango, peeled and stone taken out
3 TBSP gojis, soaked in 1 C water (which will be used too!)
10 leaves fresh basil
1/2 tsp chili, or up to 1 tsp if you like it spicy
date, soaked and pit removed

 

Preparation:

Blend all ingredients.

Add water if necessary.

Can be stored refrigerated for up to 24 hours.

Enjoy!

Notes:

C = cup, 240 ml
1/2 C = half a cup, 120 ml or / TBSP
1/4 C = quarter of a cup, 60 ml or 4 TBSP
TBSP = table spoon, 15 ml or 3 tsp
tsp = tea spoon, 5 ml
“soft dates” = medjool are usually best. If necessary, soak briefly and drain. The soaking water is super sweet by the way!
