Apricots are amongst my favorite fruit, and blended to ice cream, this is simply heaven. This recipe is super simple, made with almond milk and a hint of ginger for extra zing – if you want to know what summer sun tastes like to me, this is it.
The best part of it all, you just need a blender or food processor and freezer – an ice cream machine is optional but not required.
Recipe: Apricot Blue Ice Cream Dream (raw, vegan)
Ingredients for this raw vegan ice cream dream:
1 C almond milk
1/2 C cashews, soaked
1 C blueberries
1 apricot, chopped
2 TBSP coconut butter
3 TBSP agave
2 cm ginger
1 pinch of salt
How to make this raw vegan ice cream:
Blend all ingredients except for the apricot in your blender.
Stir in apricots and fill the mixture either in an ice cream maker to follow the manufacturers´ instructions or into a glass dish and put it in the freezer compartment.
If you use the freezer option, stir the ice cream every once in a while in order to keep the ice crystals small and the ice cream .. creamy!

Notes:
C = cup, 240 ml
1/2 C = half a cup, 120 ml or / TBSP
1/4 C = quarter of a cup, 60 ml or 4 TBSP
TBSP = table spoon, 15 ml or 3 tsp
tsp = tea spoon, 5 ml
“soft dates” = medjool are usually best. If necessary, soak briefly and drain. The soaking water is super sweet by the way!
