Chocolate chips in Cookies and Ice cream are the best – and this is a recipe on how to make your own choc chips!
What is so great about these chips is that they are made without white sugar, with only healthy fats, and that they are raw and vegan!
You can create drops and chips, or ornaments to decorate your desserts – or simply keep them in your fridge and melt a handful for chocolate frostings whenever you feel like a little bit of chocolate love!
RECIPE FOR RAW VEGAN CHOCOLATE CHIPS
Ingredients:
3/4 cup raw cacao powder
1/2 cup coconut oil, melted
1/3 cup coconut syrup (great, low fructose) or other liquid sweetener of choice
1/2 cup cacao butter
1/4 tsp vanilla
1/8 tsp sea salt
Preparation:
Blend all ingredients in your blender, adding the cacao powder gradually and as the last part of it all.
Pour into a zip lock bag, close tight. Cut off one corner of the bag, and pipe chocolate drops or any shape you wish onto a non-stick sheet.
Freeze for a few minutes.
Once solid, store refrigerated in an airtight container for up to 3 months.
Notes:
C = cup, 240 ml
1/2 C = half a cup, 120 ml or / TBSP
1/4 C = quarter of a cup, 60 ml or 4 TBSP
TBSP = table spoon, 15 ml or 3 tsp
tsp = tea spoon, 5 ml
“soft dates” = medjool are usually best. If necessary, soak briefly and drain. The soaking water is super sweet by the way!
