Recipe: Warming Chia Pudding

“This pudding is perfect whenever I have sugar cravings – by using stevia, you get some sweetness, yet your blood sugar levels won’t spike; while the chia will make you feel full and happy longer, especially when blended with creamy vegan milk – enjoy!”

Ingredients:

1 part chia seeds, black or white
5 parts plant based milk (I used the home made oat milk recipe from Milk, Vegan)
1 pinch of vanilla
organic stevia to taste
1 pinch of cinnamon
1 pinch of turmeric, freshly ground or dried

Preparation:

Stir chia seeds, milk, vanilla and stevia together until the seeds start to swell a little (1-2 minutes).

If you mix it all just briefly, the seeds will create a thicker layer on top.
In case this happens, you can simply stir them back in as well though.

Let the mixture sit for 20 minutes in room temperature, or 30 minutes in a fridge. In my experience, the seeds will swell up more slowly if placed in a colder environment.

Spoon into pretty glass ware, sprinkle cinnamon and turmeric on top, serve.

 

Store refrigerated in an airtight glass container for up to 2 days.

TIPS

Portions:

1 small or 1 real portion 🙂
1 cup – use 200 ml (or 3/4 cup + 1 TBSP) milk, and 2.5 TBSP chia seeds

4 small or 2 real portions 🙂
2 cups – use 400 ml (or 1.5 cups + 2 TBSP) milk, and 5 TBSP chia seeds
