Life’s too short to not treat yourself well – for example with this pretty healthy Blue Chia Pudding, the perfect little treat: slightly fancy yet quick to prepare. Make it with either blue spirulina or ground Butterfly Pea Tea to colour your chia pudding in a gorgeous blue. Add any plant based milk and sweetener of choice to taste and you’ve got yourself a nutritious, delicious snack, whether it’s for dessert, breakfast or a pick-me-up during your day.
Recipe: Blue Chia Pudding (raw vegan)
Ingredients for 2-3 portions:
1 cup of creamy coconut milk
1 tsp of blue spirulina or ground butterfly pea tea flowers *
1/4 cup of chia seeds
1 tsp of your favourite syrup – I used rice syrup for its low glycemic index

Mix everything together.
Stir until it starts to thicken.
Cover and refrigerate, at least 30 minutes or overnight, and wake up to pure magic.
Spoon into a nice bowl, top it off with a dollop of your go-to yogurt – I chose mango oat yogurt.
Sprinkle with fresh blueberries and some chopped almonds for a satisfying crunch.
Et voilà, you’ve got yourself a delicious blue masterpiece!
Notes:
C = cup, 240 ml
1/2 C = half a cup, 120 ml or / TBSP
1/4 C = quarter of a cup, 60 ml or 4 TBSP
TBSP = table spoon, 15 ml or 3 tsp
tsp = tea spoon, 5 ml
“soft dates” = medjool are usually best. If necessary, soak briefly and drain. The soaking water is super sweet by the way!
