Recipe: Caramel Date Paste

Caramel Date Paste might also be called Nature’s Candy 🍭 It’s raw, it’s vegan, benefits include high fiber and plenty of antioxidants, and it is pretty much the only sweetener you’ll ever need in your life. Whip it up in minutes and use it to literally sweeten anything.

Below are just a few ideas on how you could use caramel date paste in your everyday life:

➡️ Sweeten your smoothies
➡️ Dip sliced fruit into it, e.g. apples or banana
➡️ Swirl it into yogurt, overnight oats and porridge
➡️ Use it as a spread – even better with nut butter
➡️ Make creamy, sweet + spicy salad dressings or sauce with it
➡️ Substitute date paste for sugar using 1:1 ratio in baking recipes

It is such a good staple to always have in the fridge if you want to steer clear from refined sugar and artificial sweeteners, but still want to satisfy your sweet tooth.

Recipe: Caramel Date Paste (raw vegan)

 

Ingredients for one cup:

10 soft dates
1/2 cup date soaking water

optional: 1/2 tsp vanilla extract, dash of sea salt

How to prepare this recipe:

Cover the dates in warm water.

Soak for 30+ minutes up to overnight.

Strain the soaking water – it’s super sweet and you can just drink it or add it to a smoothie instead of water.

Remove the pits from the dates.

Blend the dates until completely smooth; add a dash of soaking water if needed.

Store refrigerated up to 1 month.

 

Notes:

C = cup, 240 ml
1/2 C = half a cup, 120 ml or / TBSP
1/4 C = quarter of a cup, 60 ml or 4 TBSP
TBSP = table spoon, 15 ml or 3 tsp
tsp = tea spoon, 5 ml
“soft dates” = medjool are usually best. If necessary, soak briefly and drain. The soaking water is super sweet by the way!
