Almost everyone knows Mousse Au Chocolat, but Mousse Au Citron, that’s something different, especially if it is raw and vegan, yet still fluffy, light and sweet. The perfect, delicious antidote to all the heavy festive foods around!
RECIPE: RAW VEGAN LEMON CURD MOUSSE
Ingredients for 2 servings:
400 ml water – 2 3/4 cups
1/2 cup irish moss gel
2 TBSP liquid sweetener – apple syrup, agave nectar, coconut syrup, rice syrup, maple syrup or honey (which is not vegan but considered raw)
juice of 1 lemon
1/2 tsp lemon zest
1/2 vanilla bean, seeds only
2 tsp tahini
1 pinch sea salt
* no Irish moss available? Use 4 TBSP psyllium husk
Blend everything in your blender until creamy. The consistency might be a bit liquid, but that’s ok.
Place in the refrigerator to chill. After a few hours – latest over night – the consistency should be more solid, like a mousse.
If it stays liquid, blend in more irish moss paste or psyllium husk.
Be aware that a little goes a long way with psyllium husk – it just takes a few minutes to absorb all the fluid, so make sure to wait it out before you add more.
Refrigerate until serving.
C = cup, 240 ml
1/2 C = half a cup, 120 ml or / TBSP
1/4 C = quarter of a cup, 60 ml or 4 TBSP
TBSP = table spoon, 15 ml or 3 tsp
tsp = tea spoon, 5 ml
“soft dates” = medjool are usually best. If necessary, soak briefly and drain. The soaking water is super sweet by the way!
