How good is Lassi? This popular Indian drink is usually made with regular milk or yogurt, spices and sometimes also fruit – and this recipe is pretty much that, except for using plant based yogurt, making it vegan and raw 🙂 Enjoy!
RECIPE: RAW VEGAN PINEAPPLE LASSI
Ingredients for 1 serving:
1/4 pineapple, peeled and chopped
1/2 cup coconut yogurt or almond yogurt (100g)
1 TBSP fresh lemon juice
1 tsp coconut flakes
How to make this recipe:
Blend all ingredients to a smooth mixture – done!
A pinch of cardamom or cinnamon tastes divine with this recipe as well.
You can also use half a mango instead of the pineapple.
Notes:
C = cup, 240 ml
1/2 C = half a cup, 120 ml or / TBSP
1/4 C = quarter of a cup, 60 ml or 4 TBSP
TBSP = table spoon, 15 ml or 3 tsp
tsp = tea spoon, 5 ml
“soft dates” = medjool are usually best. If necessary, soak briefly and drain. The soaking water is super sweet by the way!
